So you've chosen your next recipe, and you're ready to get in the kitchen. Here are some of my tips and tricks to get great results everytime.
STEP 1: READ THE RECIPE
Always read the recipe carefully before getting stuck in. This way, you know exactly what to expect, and there are no surprises along the way.
STEP 2: HAVE YOUR INGREDIENTS READY
There's nothing worse than being mid-recipe and struggling to find the next ingredient.
All of my recipes start with an ingredients list, and how they should be prepared prior to starting the method. This can include things like having your onions chopped, your flour weighed, or your butter melted. I would advise having everything weighed out and ready to go as specified before you start the recipe - this makes the cooking process much more enjoyable, and the clean up much easier.
STEP 3: FOLLOW THE RECIPE TO THE T
For the first time you make it at least...
Remember that recipes are tried and tested to the ingredients and methods stated. It's best not to veer off course and make crazy substitutions, as every ingredient has it's purpose.
If you go on to make a recipe and think "ooh this could be a bit spicier", then by all means maybe next time you can add a chopped chilli, but always follow the recipe to the letter first, then adjust later depending on your preferences. I will always provide substitutions if I think they are relevant, and you are welcome to contact me if you are unsure of anything.
