LEFTOVER FRIED RICE
This recipe is great for when you either (a) have some cooked rice leftover and need another use for it or (b) you are clever enough to cook some extra rice so you can have an easy meal the following day. Either way, this recipe is a quick and tasty way of using up those pesky leftovers in your fridge.

INGREDIENTS
Serves 2
Vegetable oil
250g cooked basmati rice
2 spring onions, finely chopped
1 carrot, peeled and chopped into bite-sized pieces
1/2 stick celery, chopped into bite-sized pieces
75g cooked ham, chopped into bite-sized pieces
75g cooked chicken, chopped into bite-sized pieces
1 egg
2tbsp light soy sauce
1tbsp dark soy sauce

METHOD

Preheat some oil in a large wok or frying pan over medium-high heat. Once hot, add the spring onion, carrot and celery. Give them a good stir fry for a couple of minutes until slightly softened.

Throw in the cooked rice, and give everything a good stir fry for a further two minutes until the rice is piping hot.

Add the ham and chicken and cook together for another thirty seconds or so.

Push the contents of the pan to one side, then crack in the egg. Break up the yolk a bit and allow to set slightly, before pushing the rice on top of the egg and waiting a further 30 seconds or so. Then, stir everything together, breaking up the egg in the process. This way, you should have pieces of the egg running through the rice. Finish with the soy sauce, give everything a good stir, and it's ready! Serve right away.

Feel free to use this recipe as a faint guideline for throwing in whatever you wish. You could replace the ham with some sausage, replace the chicken with prawns and use whatever vegetables your heart desires!
