SCOTTISH TABLET
I was introduced to this moreish sweet treat by my Scottish boyfriend with a sweet tooth that rivals mine. My best way of describing tablet is like a crumbly fudge that melts in the mouth. It's dangerously addictive, and so simple to make.

INGREDIENTS
Makes enough for a 7x7-inch pan
450g caster sugar
198g condensed milk (half a tin)
55g butter, cubed
125ml whole milk
1/2tsp vanilla extract
1/2tsp sea salt

METHOD

Grease and line a 7x7-inch square pan (or a tin roughly this size, it doesn't need to be exact in the case of this recipe) with baking parchment and set aside.

Place the caster sugar, condensed milk, butter and whole milk in a large, deep saucepan set over low heat. Ensure your saucepan is large and deep as the tablet will bubble up as it cooks! Melt these ingredients together gently, stirring to ensure nothing burns.

Once all your ingredients are melted together, turn up the heat to medium and bring to a bubble, stirring continuously to ensure nothing catches. Clip a sugar thermometer to the side of the pan, and cook (continuing to stir) until it reaches 120°C (this is known as the "soft-ball" stage). It will bubble up and look a bit volcanic - this is normal!

Once you hit soft ball stage, remove the pan from the heat and allow the bubbles to subside. Beat the mixture with a wooden spoon until it goes from shiny to matte, and appears a bit grainy, At this stage, you can tip the mixture into your prepared pan. Allow to cool and set at room temperature for 2 hours.

Once set, remove the tablet from the pan and cut into cubes or bars of your desired size and enjoy!
